Thousand Island Cheesy Meatball Skewers

Ingredients
1 lb ground beef
1 cup seasoned breadcrumbs
1/3 cup grated or finely minced onion
2 tsp garlic powder
2 eggs, beaten
1 tsp of salt
1 tsp of pepper
1/4 lb Cheddar cheese, cut in 1/2 inch cubes
1 1/2 cups Ken’s® Thousand Island Dressing
15 cherry tomatoes
8 small dill pickles, each cut in 4 thick rounds
15 (6-inch) cocktail skewers
Directions

1. Preheat oven to 425°F. Line large rimmed baking sheet with parchment paper or foil.

 

2. Mix together beef, breadcrumbs, onion, garlic powder, eggs, salt and pepper until well combined; do not over-mix. Shape into 1 tbsp sized balls to make about 30 meatballs in total. Insert a cheese cube into center of each meatball and press meat over the cheese to fully enclose. Place onto prepared pan, spacing well apart.

 

3. Brush with 1/2 cup Ken’s® Thousand Island Dressing. Bake for 15 to 17 minutes or until browned and cheese is gooey inside.

 

4. Thread 1 meatball, 1 pickle round, 1 cherry tomato, 1 meatball and 1 pickle round onto each skewer. Serve with remaining Ken’s® Thousand Island Dressing for dipping.
